The San Giorgio, a drink for the Saint
San Giorgio (St. George) is the Saint to whom the church stands in the main square of Ibla, a theatrical sight incomparable to any other building. Mattia Cilia, bar manager of Sultano Group, has dedicated a drink to the celebrated Saint that can be enjoyed at Cantieri Sultano, the cocktail house that opened in August, a stone’s throw from Ciccio Sultano’s restaurant Duomo. Using a Selvatiq gin base with Mediterranean essences, like sea cypress and peppermint, the drink holds an aromatic power of hibiscus and a cordial of carrots and turmeric with the beautiful red colouring recalling the blood shed by the dragon.
