The dining room and the secret bar

 

Like the kitchen of a two Michelin star restaurant, the dining room is a place for real gladiators. Remember, though, that tenacity and courage rely as well on savoir-faire. Emiliano Kamberaj is that kind of gladiator. 24-year-old senior chef the rang at Ciccio Sultano’s Restaurant, he started in 2016 at I Banchi as a runner. «We get ready all day – says Emiliano – to shape the service and make it as smooth as possible in every aspect. The dining room is our stage, even if it is not a play – we serve an experience». The same happens in Sultano’s secret bar, Cantieri Sultano, the laboratory lounge next door. Here, the cocktails’ preparation is entrusted to Andrea Lubrano, under the direction of Mattia Cilia, the group’s bar manager. «Here – Andrea highlights – there is nothing pre-packaged: we do pure and simple experimentation to obtain drinks that amplify the sensory experience».
