Autumn and Winter is the new dessert by Ciccio Sultano and Fabrizio Fiorani. It’s an emotional combination, which captures the essence of the forest and the vegetable gardens during the two cold seasons of the year.
«There is the persimmon apple – Fabrizio Fiorani, the pastry chef of the Sultano Group, explains – marinated in amaretto, featuring such a particular consistency. Then, there are the seedless persimmon fillets, the Illy coffee meringues, and a very thin wafer of 46% milk chocolate of Belize, which frames the dish like a porthole.
