Here is Mago!
Let us introduce you to the perfect symbiosis between Italian pastry-making and contemporary Italian craftsmanship. The dessert Mago has been created by Ciccio Sultano’s pastry chef, Fabrizio Fiorani, who also designed the porcelain object containing the cake, made by Puntosoave di Cittadella.
Mago, as Sultano explains, is a flavoursome explosion of carrots, with the Sicilian bee honey, pure and umami, working as the catalyst.
For Ciccio Sultano, pastry-making is a return to childhood, to playtime, to wonder.
«Underneath the porcelain a hat from where the rabbit’s ears pop out – Fiorani explains – we find carrots in three different consistencies: cooked in vanilla, in the form of pure foam, and raw, to which caramel ice cream is added». The long ears of the hat-lid refer to an acoustic element to pay attention to while enjoying this miniature work of art.
