Wine of the month: Enrico IV contrada Santo Spirito 2017 Cantine Valenti
This Etna Bianco wine is produced from Carricante grapes growing on the North Side of the Etna. Straw-yellow tinted, it features spiced aromas of grapefruit, mint and tropical fruit. The taste is elegant, savoury, and with the potential of further maturation. The bunches of Carricante are harvested by hand. As soon as they arrive in the cellar, the stems are taken out and the grapes are left to macerate at low temperature on the skins for 24 hours. Then, fermentation is carried out in steel tanks at a controlled temperature of 14/16 ° C. The wine rests for about six months in barrique, in contact with the yeasts. Finally, before being put on the market, it ages for another three months in the bottle.
The recommended combination is with the mezzi paccheri ai Beati Paoli, fish and rose scent. The mezzi paccheri are handmade with bronze dies. The catalyst element, the spark that gives life and meaning to the dish, is the encounter between the fennel and the rose. This is a combination that truly upgrades the culinary creation.
