The identity
There are many who, after tasting our dishes, say they recognise the flavours. This observation pleases us because it comes from identity, not from simplicity. In the kitchen, simple is a result that can only be achieved with great effort. Mine is a Sicilian cuisine that betrays tradition every day. It is not the grandmother’s kitchen but the grandchildren who will continue to feel Sicilian.
