The new menu: Santa Lucia, bianco latte

 

Among the new desserts from the à la carte menu, one is inspired by and dedicated to the colour of white. Milk white, “biancomangiare” and the white candour of Saint Lucy of Siracusa.
As Fabrizio Fiorani, pastry chef at Ciccio Sultano’s Restaurant points out, this dessert is the answer to the question: what does milk taste like. It’s milk to the power of three: goat’s milk granita, a semifreddo and milk foam with unroasted pine nuts.
At the table, restaurant manager Riccardo Andreoli finishes the dish off by adding vanilla puffed wheat, giving the nod to the traditional Sicilian Cuccìa.
