From the new menu: Mezzi paccheri ai Beati Paoli, fish and rose’s scent
It is unknown who they were exactly, the Beati Paoli. Some say they were the avengers of the poor, born in the 12th century (1100). And some others, like the historian Pitre, are inclined to consider them as a criminal affiliation, born in Palermo in the Cuncuma garden, where there was a big tavern.
The half paccheri are handmade with bronze dies. The catalyst element here, the spark that gives life and meaning to the dish, is the encounter between fennel and rose. It’s a combination that heads to the top. First, it comes the pleasure, then the joy or even love. Photos: Giuseppe Bornò.
