These days, putting yourself in front of the mirror has become not only easier, but necessary. I wrote down some questions and answered them myself.

Yes, in my humble opinion, the most vulnerable will be the cook who thinks and practices a conceptual, extreme, metaphysical, purely spiritual cuisine. Such a subtle one, that can’t be seen anymore.

And what kind of official or social commentator?

The one who preaches a conceptual, extreme, metaphysical, purely spiritual cuisine. And while feeling much superior, this commentator goes hand in hand with the little Moses, those who explain you how you should or could have done. The category of tedious picky people who splash around in social media.

Today, which cuisine has become useless?

A kitchen that does not know how to stay close to man and nature. A kitchen all laces and little intelligence. Intelligence means to respond to the needs, not to deceive, not to hate, to put together ideas, people, to seek happiness everywhere.

If the restaurant opens tomorrow what would you say to your customers and what dish would you celebrate with?

I would propose a barter.

What do you not like about quarantine talks?

The sketches of varied humanity and too many people sticking their noses in. From the State, I would expect a technical partner, given the highest degree of authority, who will explain the common line to follow.

Here, instead, it seems that everyone does what they want and says all the nonsense that passes through their heads or repeats by hearsay. For example, did you understand something clear about masks?

What moved you or has made you proud?

Right now, there is nothing that makes me proud. I am constantly moved by people who die. All I do is pray.

What are you afraid of?

Of the war and of the effects of this war on our planet and on mankind.

Is there a corner of your home that now attracts you more?

My toolbox shed in the garden.

The pleasures and the challenges of living together?

None.

The fixed thought of a Sicilian today?

The loss of the land to be cultivated and raised.
