Per Cento in barrique
The next Per Cento will age in barrique of Limoges oak. It’s not any type of barrique, but one of Angelo Gaja, where there was his favourite Chardonnay Ray. Per cento, a cocktail of liquors among which there is Amara, is born from an idea of Ciccio Sultano.
«We started with a three litres magnum – Sultano says – decanting in turn the magic liquid from “u lmuni”, an earthenware bowl of around 10 litres capacity. Now we move to the 225 litres barrique and we wait.
«The objective is to have an everlasting blend to fill up when necessary». Per cento is a cocktail of meditation, but also to be served icy.
