Fettuccelle pasta with mosaic of fish and two caviars sauce

 

Under the fettuccelle of durum wheat flour there is a sauce of two caviars, herring and Atlantic horse mackerel (noble and unacknowledged blue fish), while on top of them, there is the fish mosaic, with pieces of sea bass and red lobster of Mazara, sprinkled with a sauce of clams, oil, garlic and parsley.
The raw fish is cooked with direct flame when it has already been plated, a moment before being served to perfection at the table.
