Il Mozzafiato, midnight oil

 

Limited edition, in quarter-litre bottles, Il Mozzafiato, born of an intuition four years ago, that will be milled in the night between 26 and 27 September.
An “extremely fresh” oil, well ahead of the traditional pressing of nocellara that usually takes place in November. The Incuso brand had already anticipated production once an October, with a yield that fell from 20 to 13 percent, giving life to the Black Label version. Now, only for Il Mozzafiato ithere is a yield below 10%, to the benefit of quality and taste, accentuating the hints of tomato, artichoke and almond.
«I had organized an event in Milan – says Pasquale Bonsignore – to celebrate three years of a start-up that collects and produces in Sicily, in the Castelvetrano area. To make the meeting more memorable, it was decided to crush two quintals of Nocellara olives in time for the evening. We were at the end of September and the result was so extraordinary that it made us want to repeat it ».
