“Pisci d’Uovo” Style Red Mullet

 

The dish consists of a fried tile of tomato salad and pangrattato,  crunchy fish bone (baked after having tied the tail) the mullet fillet incised and stuffed with black olives and a citrus gelatin made from green lemon, lime and blood oranges. The dish is completed by the profile of the fish, drawn with squid ink, a pot of mullet sauce and oven dried orange grated over the top.
