The refusal of the bones in fine dining

 

True elegance requires thoughtful and measured gestures, in other words style, but the banishing of bones in the name of finesse from haute cuisine does not make sense. Today, the rule seems to be that one should have very little use of the jaws that Mother Nature has given us.
I gave my daughter a gift of a big bone in steak. What chewing, she learned to chew! Chew well and do it long not only to thoroughly enjoy food, freeing the juices, but greatly aid digestion.
Instead, contemporary laziness and a fake etiquette would have us forget the bones. Abolish the pigeon thigh and only eat the breast? Are we crazy?
