The wine of the month: Orange AV01, Catarratto bio 2017 from Rallo

 

AV01 is an abbreviation that corresponds to the initials of two names, Andrea Vesco and Aldo Viola, producer and winemaker, the first Rallo wine where the sulfur has been eliminated thus changing completely, with respect to conventional wines, the aromatic and gustatory spectrum. An organic wine, handcrafted, different from the color, neither red, nor white, nor rosé, but in fact “orange”. “In the absence of sulphites – specifies Andrea Vesco – scents emerge of Mediterranean scrub, almond, rosemary, sage and facilitates the drink. ” Spontaneous fermentation takes place in acacia barrels, they are then refined first in steel, for 6 months, and then in the bottle for others about 2 months, maceration on the skins lasts for at least 24 hours. At the Duomo Restaurant, Ciccio Sultano in agreement with the Sommelier, suggests pairing it with one of the dishes from the menu Sicilian Dominazione menu: Red mullet, from De Coquinaria of Apicius.
