The wine of the month: Pruvenza, Vittoria Frappato doc 2015 made by Paolo Calì

 

«Pruvenza is the name given to a north-west wind – Paolo Calì explains – in 2004, the wind raised the prehistoric sands on which our vineyards are planted, it ruined the vine shoots. Despite the difficult beginning, from that vineyard, we succeeded in producing a pure frappato that isn’t simply a table wine, but something more special.  Pruvenza is a wine structured and long-lived, vinified and aged in oak barrels for 24 months, using whole grape bunches. Elegant, fine, with a distinct minerality, it stands out for its notes of black currant, pomegranate and flowers, spices and vanilla.«I find that the Pruvenza of my friend Calì – specifies Ciccio Sultano – can match one of the dishes from the Sicilian Dominations menu, the Cagliostro chicken. Chicken thighs from Aia Gaia with its skin crunchy served two sauces,  a cinnamon-based pipirata with ginger, cloves, macerated honey, wild rose and elderberry and harissa with cumin, cardamom, yellow pumpkin, pepper and chili pepper».
