Ciccio Sultano and Alfio Visalli present their new Blue Fin Bottarga recipe
With Sultano as the selector and Visalli the refiner, only 60 kilos of bluefin tuna eggs are processed every 45 days, making this bottarga a true delicacy. A painstaking production, this is a unique product which requires precision and balance. After the first phase of fermenting in sea salt, they enter the ‘floral phase’, where the two artisans add rose petals, elderflower, ibleo honey and other secret ingredients. At this moment something magical happens.
