Marine trans-humanity
A dish of belly and brain baptized by my friend, the trumpeter Roy Paci, and cited in the book The Stone Crow by Marco Steiner, an expert on Corto Maltese, and published by Sellerio. Everything starts with the squid, “totano”, that swells like a lung in order to move its body. Lung, then, and squid come together with a sauce of goat’s cheese and an extract of grape must.
