A recipe to finish at the table. The “fake truffle” is a puff pastry filled with cream finished with a dusting of powdered strawberry, truffle and squid ink. The sphere is laid over squid-ink breadcrumbs and a slice of foie gras. The dish is completed with a drizzle of hot béchamel, made with water instead of milk, into the bowl.
